White Currant Salmon with Mint

This one is really easy.  It does sound a bit odd but it really is quite good. I found the idea in an interview with Martha Stewart a while back and have wanted to try it for awhile.

All you do is this: season the salmon with salt and pepper and drop dollops of butter on top. Then rip up some of the mint.  Put that on top as well.  Take the clean white currants (without stems) and place all over salmon.  Cook until fish is cooked thoroughly.  You can put some more fresh mint on top.

Very yummy!
