Wacky Cake Recipe

This recipe has no nutritional value…sorry. It is something I never had while growing up but my husband did and now it is one of our family favorites. It’s a go-to FHE treat, something that is cheap to make and a recipe with ingredients you always have. They SAY that it is a cake that came about because of rationing during World War II when eggs and milk were scarce. It was also popular in the 70’s. Either way, I love it. You actually make it in the pan in which you bake it!

Wacky Cake Recipe

Ingredients:

1 1/2 c. flour

1 c. sugar (I use the raw organic sugar and it turns out great)

3 Tablespoons Cocoa (I also use raw and organic and it turns out just fine)

1 teaspoon baking soda

1/2 teaspoon salt

1/3 cup corn/vegetable oil

1 Tablespoon vinegar

1 teaspoon vanilla

1 cup cold water

Directions:

1. Mix together all of the dry ingredients in the UNGREASED pan in which you will be baking the cake (we use a square 9 inch “brownie” size pan).

2. Make three “dents” in the mixture. In one pour oil, in the next one pour vinegar and in the last one pour vanilla.

3. Pour cold water over all.

4. Mix carefully in pan until blended.

5. Bake at 350 for 25-30 minutes.

6. We like it topped with just a simple butter frosting but you can do chocolate frosting as well! I love eating it warm. My husband likes it room temperature.

My husband made this for Valentine’s Day. Those are his hands. I promise I don’t have man hands and I don’t wear lumberjack shirts. 😉 Although, I may or may not be having to wear my husband’s pajamas at night due to Baby Shae being huge…I will never tell.
