Tyler’s BBQ Chicken Sammie

I love Station 22 down in Provo, but it is far away! One day I really wanted my favorite sandwich from there and my husband figured out how to make it. We haven’t found the best bread to put it on yet BUT other than that I like it better than Station 22’s version!

Although it’s hard to get recipes out of Tyler, when I know I want to blog something he is cooking I sit by him while he cooks and the conversation goes like this: “How much of that did you just put in?” “I don’t know, like SOME” “Well what is SOME?” “WHY?! Why do people need to know, why do people have to have exact recipes?” “They just do, it stresses them out when they don’t know and then I get emails!” “Pshaw, people don’t need recipes to cook.”  So I do my best….

Tyler’s BBQ Chicken Sammie

This makes 6-8 sandwiches

Ingredients:

3 cups of buttermilk

2 T. of Paprika

Salt & Pepper

3-4 lbs of chicken breast

Half a head of purple cabbage

1/3 sliced very thin red onion

1/2 of mayo

Rolls

3 T. Butter

1/2 cup of BBQ Sauce

Flour for chicken breading

Vegetable oil for frying

Directions:

1. Cut the chicken in strips (like picture below) and add in paprika, salt, pepper, and buttermilk.

2. Let marinate covered overnight in the fridge OR just all day long.

3. Make your slaw by combining the mayo, red onion and cut up purple cabbage.

4. Set up your frying station for the chicken. You take the chicken strip, roll it around in the flour, and then fry! You know how to fry chicken strips 🙂 Tyler did not feel like explaining that part.

5. Melt the butter, add in the bbq sauce, and whisk. Then coat both sides of the chicken strip.

6. Place on the roll with the slaw and enjoy!
