Summer Pizza

Right before I took my month long break from blogging I put up a survey for you all asking what posts you don’t like so much, what you want to seem more of, etc. Over 80% of you voted for more recipes! Now, let’s be honest.  Only about 2/3 of the recipes I try at my house turn out, so it is not like I am a chef or anything. However, I just love to cook and try new things and I promise to only put up the recipes that we LOVED and that (of course) turned out. So every Tuesday I will post my Raising Kids on Real Food recipe AS WELL as one more recipe for you. I also always suggest you use organic, free range, no hormones added food in all the recipes. So Tuesday is officially food day on the blog.  Hope you enjoy!

Summer Pizza

Usually in the summertime we GRILL our pizzas, but right now the landscapers have torn apart our backyard, so in all of these pictures the pizzas are baked. I will do a video how-to on grilling pizzas soon so you know how to do it.

Ingredients:

Ball of Pizza Dough (I am so lazy and just buy them from our favorite pizzeria)

Olive Oil

Minced Garlic

Salt & Pepper

12 slices of fresh mozzarella

6 oz Feta

1/2 cup of sun dried tomatoes

1 leek, cut up and sauteed with olive oil (I just think leeks are so pretty so here is a picture!)

1 chicken breast, cut up and cooked

12 fresh basil leaves

Directions:

1. Season the pizza dough with olive oil, salt and peper and garlic. I do this on ALL of my pizzas, but since this one does not have a sauce (this makes a sauce for it), make sure to do it.

2. Top with fresh mozerella, then leeks, sundried tomatoes and feta cheese. Cook the Pizza for 10-12 minutes in the 400 degree oven.

3. Lastly, top with basil and enjoy! Such a great lighter pizza for summertime.
