Shrimp Tacos
This recipe is going to be hard for me to write down. We love these shrimp tacos but I just make them on a whim, with no written down recipe in front of me. So here we go!
Shrimp Tacos
Ingredients:
2 lbs of Shrimp
3 T. of Butter
2 T. of Minced Garlic
Fresh Corn from 3 Stalks of Corn
1 can of Black Beans
1/2 of a Red Onion
Salt & Pepper
Olive Oil
2 Limes
2 Avocados, chopped
1/2 Bunch of Cilantro
1/3 cup of Mayo
1/2 cup of Sour Cream
2 tsp. Cumin
Tortillas
Directions:
1. Cook shrimp in 3 T. of butter and 2 T. of garlic until fully cooked. Set aside
2. Cook red onion in olive oil. When soft, add in the black beans and corn. Cook for a couple of minutes. Add the cilantro, juice from 2 limes and avocado into this mixture.
3. Mix together 1/3 cup of sour cream, 1/3 cup of mayo and cumin.
4. Onto tortillas, layer corn mixture, then shrimp and then a dollop of your cream mixture and enjoy!
