Shrimp and Cheese Dip

YES.  Seafood and cheese…but oh, it works and you must try.

When I was a nanny back in Boston, the family I worked for had this famous dish they made every Christmas that had been passed down from the wife’s grandmother. It was too yummy and easy to forget so for the past 5 years we have made it during the holiday season. It gets snacked up faster than anything else on the potluck table and people can’t believe how easy it is to whip up.

You can say thank you after you make it. This year ABBY made it because she is my little gal who freaks out at the seafood counter, begging me to buy shrimp.

Shrimp and Cheese Dip

Ingredients:

I block of Extra Sharp Cracker Barrel Cheese (10 ounces)

1/2 lb of shrimp (I prefer raw shrimp and I cook it up)

1 jar of “Tiny” Mayo

Salt & Pepper

Small Onion, minced

Portuguese Bread (or just a nice artisan round bread that can hold the dip and sliced Baguette on the side)

Directions:

1. Prepare the shrimp (de-shell and de-vein and chop) and cook with the onion and salt and pepper till onion is soft and shrimp is cooked.

2. Break up the the cheese and melt with the mayo.

3. Mix in shrimp and place in the middle of a cleaned out circle of bread.

4. Serve baguettes on the side and enjoy!
