Raising Kids on REAL Food–Pancakes Packed with Fresh Fruit

Another great breakfast idea for you! These are great to make for company as well because they are so beautiful!

Pancakes Packed with Fresh Fruit

makes 4 (which is perfect for my family but you might need to double)

Ingredients:

2 Bananas

Unsweetened Coconut

1 cup of plain yogurt

Drizzle of Honey

1 cup of flour

1 cup of milk

Salt

3 T Butter

1 Mango or 1 Apricot or 1 Peach (let them pick. Kids love choices!)

Directions:

1. Mash together Bananas, Yogurt, Coconut and Honey. Reserve for Topping.

2. Mix together flour, milk and pinch of salt. Heat butter in pan and cook the pancake batter.

3. Arrange the reserved topping on top and then add your sliced fruit.  It’s all jam packed with fruit and no syrup is needed!
