Raising Kids on REAL Food–Chicken Fajitas

Alright, I had to get that chicken rant out of my system (see the next post).  Now that I have, let me show you the chicken I use and a great go-to recipe with it.

Chicken Fajitas

This is a recipe we always love.  It is quite hard to mess up (because I tend to do that a lot) and is full of yummy veggies.

Ingredients:

2 Organic Free Range No Hormone Added Humanely Raised Chicken Breasts (this is enough for 6 fajitas)

2 tsp Cumin

1 tsp Chili Powder

2 tsp Your Favorite Meat Seasoning (mine is Lemon Pepper, homemade)

2 Limes

2 tsp Minced Garlic

2 tsp Olive Oil

Salt & Pepper

3 Peppers; Orange, Yellow & Red

Red Onion (forgot it this time, though!)

Whole Grain Tortillas

Sour Cream

Salsa

(I try my darndest, hardest to buy local & organic or at least one of those things on all my items)

Directions:

1. Rub the chicken breasts with cumin, meat seasoning, chili, garlic, olive oil and the juice of two limes. Let sit for 20 minutes so they soak up the flavor.

2. Slice all the peppers into thin strips and then season with salt & pepper.

3. Heat up a large skillet with some olive oil in the bottom and add in the peppers and sliced up marinated chicken. Cook until chicken is done and peppers are soft.

4. Serve on a whole grain tortilla with sour cream & salsa.

P.S. Peppers are a vegetable my girls are still getting used to. They like when I use different colors and we do a “taste test” to see what color they like the most that day. That is usually what it takes to get them over the thought of peppers and to gobble them right up.
