We have WAY too much fun with these.  Announcing…Mini Cupcakes, where every ingredient is good for you!

Mini Healthy Cupcakes

1 1/2 cups shredded/grated carrots

1/2 cup ground nuts

1/2 cup olive oil

1/2 cup honey

2 beaten eggs

1/2 cup raisins

1/4 cup flax seed

1/4 cup dried cranberries

1 1/4 cup whole wheat flour

2 tsp baking powder

Fill each mini cupcake in the tin to the fullest it can go. Cook at 350 for 15 mins or until a toothpick comes out clean.

Top with icing. I make a cream cheese/maple syrup flavored icing to go on top.

    Such a cute video! These sound too healthy for me…LOL In the video you said “baking soda” but the recipe says “baking powder.” Would you clarify just in case I do make these some day? ;)

    P.S. When do I get to be on the next INGU “Iron Chef?”

    I just made this recipe. How long am I supposed to let these cool before getting them out of the muffin pan? I’ve torn two muffins so far.

    cooling them to room temperature like with other cupcakes and muffins is what you need to do
