Mascarpone Pasta

If you are not using Mascarpone you are missing out.  You can make a simple cake amazing with Mascarpone.  You can make a very rich and very delicious pasta as well.

Mascarpone Pasta

Ingredients:

1 lb of Bow Tie Pasta

3 tablespoons olive oil

1 small onion, finely diced

3 medium carrots, peeled and diced into 1/2-inch pieces

1 cup organic chicken stock

1 cup of peas

I package of cream cheese

8 oz (one tub of) mascarpone cheese

Sea Salt & Pepper

Directions:

1. Cook the pasta according to the directions on the back. Remember it will simmer in the “sauce” for a bit, so be careful not to overcook it.

2. Cook onion in olive oil until tender.  Then add in carrots and stock and bring to boil for about 7 minutes.  Add in peas and cook for just a bit. Add in your cooked pasta and remove from heat.

3. Then add in your mascarpone cheese and cream cheese and season with salt and pepper.

    You can find it in the specialty cheese section, which is usually near the deli.
