Easy Sweet Potato Soup Recipe

This is another recipe from my head, but it is so simple that even if this recipe is not exact, it will be quite yummy at your house too. This is an Easy Sweet Potato Soup Recipe from me to you!

Easy Sweet Potato Soup Recipe

Makes one pot, almost full

Ingredients:

2 large or 3 medium sized sweet potatoes, peeled and cubed

2 large or 3 medium sized Idaho/Russet potatoes, peeled and cubed

1 sweet potato, peeled and grated

1 Idaho/Russet potato, peeled and grated

1 large onion, finely chopped

Garlic (a couple teaspoons minced…I LOVE garlic)

1 stick of butter

Salt & pepper

Two fresh rosemary sprigs

4 cups/1 box of chicken stock

1/2 cup of whole milk

1/2 cup of cream

Directions:

1. Chop and grate up all those yummy veggies!

2. Melt 1 stick of butter in large pot and let onions saute. Throw in garlic to saute a bit too. Then add in the chicken stock.

3. Add in sweet potatoes first and let them come to a boil. Simmer for about 4 minutes. Then throw in the regular potato and also the grated potatoes.

4. Throw in salt and pepper and fresh rosemary. You can either take it off the sprig and chop it off or throw it in on the sprig and just take it out later.

5. When potatoes are done (you can poke a fork through them and they taste done), add the milk and cream.

6. You can either eat it as is OR puree it with a hand blender. When cooking for my husband and my kids, I have to puree it more than I would like. It is weird. They gobble it up when I puree it (mostly, it still has some chunks) but if I leave it the way I like it (maybe just a little pureed or not pureed at all) I get whiners.

7. It is good topped with Romano Cheese. Enjoy!

P.S. This is a fun one to let the kids help with. They like washing the potatoes, peeling them and grating them. My three and four year old girls help out tons and tons. Also helps with our goal of….
