Cupcake Story Recipe

August 3rd, 2009 in cooking, family, party time

Here is recipe from the Cupcake Story last week and let me tell you, they were SO yummy! My husband, who isn’t even big on cupcakes, thought it was one of the best treats I have ever made. Sadly I cannot take all the credit; the cake recipe I borrowed from my friend Brittany and the filling from Martha.

Marshmallow-Filled Hostess Style Cupcakes

Cupcake Batter (recipe from Brittany from Cottage Road Designs)
1 3/4 c. flour
2 c. sugar
3/4 c. cocoa powder
2 t. baking soda
1 t. baking powder
1 t. salt
2 eggs
1 c. hot chocolate
1 c. sour milk or buttermilk
1/2 c. oil
1 t. vanilla

Mix dry together. Stir in liquids. Beat until mixed thoroughly. Batter will be thin. Pour into greased cupcakes tins.

I had lots of fun adding hot cocoa to the mix. I thought it was pretty cool!

P.S. THIS is how thin the batter will be–yes, REALLY thin.

Marshmallow Filling (recipe from Martha Stewart)

Simply take 2 cups of Marshmellow Fluff and beat with 1 stick of unsalted butter. Who knew this could be so good?

When the cupcakes are cool take the fluff mixture and put it into a pastry bag, press down into the cupcake and fill! Then decorate with a little…whoosh!

So simple but so incredibly good!
