Crazy Cheap & Easy Dinner Recipe #4 by Maria-Black Bean and Sweet Corn Soup with Cilantro and Lime

Maria and her husband, Josh, have a successful food blog, Two Peas and Their Pod. They are known as the “cooking couple.” They are a great team in the kitchen. They love trying new recipes, flavors, and techniques and sharing their creations with the world. They try to keep things healthy, but they always save room for dessert. Maria loves to bake cookies-they have over 70 cookie recipes on their blog.

Maria has also been spotlighted on The Pioneer Woman’s Tasty Kitchen site and is listed as a “Fantastic Food Site” on the Pioneer Woman’s website.

Today I am going to share an easy, healthy, and affordable soup recipe-Black Bean and Sweet Corn Soup with Cilantro and Lime. It is one of our favorite recipes.

This soup is filled with goodness. I love the hearty black beans and sweet corn. If you don’t have fresh sweet corn, frozen or canned corn will work. There are a lot of flavors going on-cilantro, lime, green chiles, jalapeno, etc. If you are afraid of heat, you can tone it down; just leave out the jalapeno. This soup is vegetarian, but if you want to add in some chicken, go for it.

The soup is tasty on it’s own, but we always like to jazz it up with fun toppings. Garnish the soup with cheese, avocado slices, tortilla strips, cilantro, and a fresh squirt of lime juice. I like to make a big batch so we can enjoy leftovers. I also like to freeze some of the soup for a rainy day…also known as-when I am feeling lazy and don’t want to cook days:)

We love this soup, not only because it is good for you, easy, and cheap, but because it is down right delicious! Enjoy!

Black Bean and Sweet Corn Soup with Cilantro and Lime

1 T olive oil
1 yellow onion, chopped
3 cloves garlic, minced
1 green pepper, chopped
2 cups sweet corn (ours was frozen, no need to thaw)
1 small jalepeno, minced
1 can diced green chiles
4 cans diced tomatoes (I use low sodium)
4 cans black beans, rinsed and drained (I use low sodium)
3 cans vegetable broth (I use low sodium)
2 T chile powder
1 1/2 T cumin
1 bunch cilantro, chopped
Salt and pepper, to taste
Juice from 1 lime

Toppings:
Tortilla strips
Pepper Jack cheese
Avocado slices
Cilantro
Lime wedges

1. In a large soup pot heat olive oil. Add in onion and cook until tender.
2. Add in garlic. Cook for 2 minutes and add in green pepper.
3. Stir in sweet corn, jalepeno, green chiles. Stir and let cook for about 5 minutes.
4. Stir in tomatoes and black beans. Next, add the vegetable broth. Stir in the spices, cilantro, and salt/pepper. Squirt in the fresh lime juice.
5. Let simmer for 30 minutes. Stirring occasionally.
6. Taste, you might need to add more seasoning. I always end up adding a few extra dashes of chile powder and cumin.
7. Serve hot. If you want to add toppings, go for it. It makes the soup even better!

    The soup looks great! I made something similar last night and I admit I added some chicken and used Italian spiced canned tomatoes.
