Chile Relleno
Hi there! I’m happy to be a part of Vanessa’s “Crazy Cheap and Easy Family Dinner Week” because who doesn’t love cheap and easy?! Today’s recipe is one of my go-to dinners in a hurry because I almost always have all the ingredients on hand:
eggs - check.
flour - check.
cheese - check.
half and half (or whole milk works great too) - check.
The other two ingredients: green chiles and tomato sauce are two great canned items to always have on hand.
If you’d like, you could add refried beans and Mexican rice as sides to this recipe in order to make your dinner feel more complete.
Here is a little step by step photo tutorial. This recipe is a no brainer.
Now, doesn’t that look good?! It puffs up in the oven right before you take it out. It’s so good. I hope you like it.
Here’s the recipe:
Chile Relleno
3 - 4oz. Cans Whole Gr. Chiles
1 - 8oz. Can Tomato Sauce
2 - Eggs
1 - Cup Half & Half
1/3 Cup Flour
1/2 lb. grated cheese (cheddar/jack or mexican blend)<
Drain and chop whole green chiles. Beat half and half, eggs and flour until smooth. Now Layer the chiles, egg mixture, tomato sauce and cheese into an 8×8 glass pyrex dish.
Bake for 1 hour @ 350.

My parents live in Hawaii and those cans of chiles cost $3! Can you believe it. She stocked up while in Utah (for 58 cents)

**EDIT**
Just made it. Not bad.
Persoanlly the changes I would make:
Instead of chopping the green chiles, stuff them with shredded chicken and layer them.
AND instead of the Tomato Sauce, I will be using Enchilada Sauce. I emailed my husband the recipe this afternoon before I made it and he said the TS sounded off, and sure enough it didn’t taste qwuite like a real relleno, but I it was very close. Enchilada sauce, which everyone who lives any where you can get real rellenos should have, would make this perfect.
Overall, we really liked it. Russ even ate ALL of his portion without too much prompting! His dad didn’t have to threaten to beat his butt even once!
