Corn Avocado Relish

Here is the recipe for the Corn Avocado Relish I have mentioned a few times on the blog:

Corn Avocado Relish

Ingredients:

4 ears of corn

2 poblano peppers

5-6 avocados

2 limes

1/3 of a large white onion, chopped

1/3 of a large red onion, chopped

1/2 bunch of cilantro

2T. Olive Oil

2 T. White Vinegar

Salt & Pepper

1. Place ears of corn & poblano peppers (cut in half and seeded) on a baking sheet and put under broiler. Let cook for 4-5 minutes on each side. Slice corn off ears and chop up peppers.

2. Chop up onions, avocados, cilantro and add to chopped up peppers. Add in the juice from 2 limes.

3. Add in the corn, salt, pepper, olive oil and white vinegar.

 

4. Mix well (but softly so you don’t smush avocados too much), and store in an airtight container until you use.

You can use this as an inside for vegetarian tacos, along with meat for tacos, as a “bed” for sliced chicken or fish, or you can just eat it with chips.
